Veggie “Meatballs”
Mix together 1 cup onions, 1 cup soybeans (soak 1 cup soybeans in 3 cups water overnight, cook 1-2 hours and mash together 1 cup), 1 cup bread crumbs, 1 cup mashed tofu, 1/4 cup chopped walnuts, 1/2 cup carrots, 2 tablespoons cornstarch, 1 teaspoon sage and oregano and garlic and thyme and cumin. Mold into balls. Bake in a 325 degree oven 30 to 45 minutes. Warm tomato sauce and
garnish with grated cheese.
